Roast Spatchcock
Ingredients
1 spatchcock
half a dozen garlic cloves
half a dozen rosemary sprigs
salt
oil
Method
Pre-heat your oven to 180°C
Rub the skin of the spatchcock with salt to season
Place half the rosemary and garlic inside the spatchcock
Add foil to the ends of the drumsticks to prevent burning and tie the legs together with twine
Put the remaining rosemary in the bottom of the cast iron pan
Place spatchcock on the pan and arrange garlic around
Roast for approximately 40 minutes on depending on your oven
Let rest for a good 10 minutes before serving, garnish with a sprig of rosemary and serve
Tips & Hints
For best results don't skip the resting time.
