A fresh and delicious pasta using prosciutto, vegetables and mediterranean herbs.
Ingredients
375g penne pasta
6 slices prosciutto
2 tbsp olive oil
2 tbsp Gourmet Garden Mediterranean Seasoning
100g semi-dried tomatoes, chopped
100g baby rocket
100g roasted yellow capsicum, thinly sliced
100g feta cheese, crumbled to serve if desired
Method
Preheat grill to high. Place prosciutto on a baking tray. Grill for 4 - 5 minutes or until crisp. Set aside to cool. Break into pieces
Meanwhile, Cook penne pasta in a large saucepan of boiling salted water following packet directions until tender. Drain. Return to pan
Add olive oil and Gourmet Garden Mediterranean Seasoning. Toss to coat. Add semi-dried tomatoes, baby rocket, prosciutto and roasted yellow capsicum to pasta. Toss to combine. Serve topped with crumbled feta if desired
