The Health Muffin
Ingredients
- 2/3 cup Fresh Orange Juice
- 2 small Fuji apples, finely chopped
- 1 medium ripe banana, mashed
- 1/4 cup sultanas
- 1 egg
- 1 1/2 cups Wholemeal plain flour
- 2 tsp baking powder
- 2 tbsp organic Safflower Oil
- 1/4 cup walnuts, chopped
- 1/4 cup Traditional Raw Rolled Oats
- 1 tsp Cinnamon
- 1 tbsp Pepitas
- 1 tbsp Sunflower Seeds
- 1 tbsp Wheat germ
- 1 tbsp Chia Seeds
- 3 Strawberries
- 1/4 cup Special K
- 1 tbsp LSA Mix
Method
- Preheat your oven to 200°C and lightly grease a muffin baking tray with either an oil spray or for a proactive spread.
- Pour the fresh orange juice into a saucepan over medium heat and warm. Once the fresh orange juice is heated combine the sultanas, apple and mashed banana and stir till the apple becomes tender and soft and it forms a rich consistency.
- Sift the wholemeal flour into a bowl and combine the baking powder and cinnamon. Whisk the oil and egg together.
- Add the cooked fruit mixture and egg and oil to the flour. (Add LSA Mix, Wheat germ, Chia Seeds, Sunflower and Pepitas seeds if desired) Also add the chopped walnuts and Traditional Rolled Oats and stir gently. Do not over mix the batter.
- Evenly distribute the mixture into the baking tray and top with Special K and chopped strawberry pieces. Bake for approximately 15 - 20 minutes.
