This delicious mushroom barley soup is sure to be a favourite recipe for the whole family in no time. This is the perfect soup recipe to warm you up in autumn and winter.

Mushroom Barley Soup

Ingredients

  • 2 tablespoons oil
  • 100g prosciutto, sliced
  • 1 onion, finely chopped
  • 1 carrot, peeled and finely chopped
  • 1 stick celery, finely chopped
  • 2 cloves garlic, crushed
  • 2 teaspoon thyme leaves
  • 500g mixed mushrooms (eg Portabella, cup, Swiss Brown), sliced
  • 8 cups water
  • 2 tablespoons VEGEMITE
  • 1/2 cup pearl barley
  • Parsley
  • Grated Parmesan, for serving
  • Crusty bread, for serving


Method

  1. HEAT the oil in a stockpot and gently cook the prosciutto, onion, carrot, celery, garlic and thyme for 5 minutes or until softened
  2. ADD the mushrooms, water and VEGEMITE and bring to the boil. Add the barley; reduce the heat and simmer, stirring occasionally, for 2 hours or until the barley is tender
  3. SPOON into serving bowls and top with some parsley and a sprinkle of Parmesan. Serve with crusty bread
