Make these Fruit Mince Tartlets for everyone this Christmas. They are a quick and easy snack or dessert this Christmas.

Fruit Mince Tartlets

Ingredients

  • 1 cup flour
  • 1/2 cup cornflour
  • 1/4 teaspoon baking powder
  • 1/4 cup ground almonds
  • 125g butter, chopped
  • 1 egg, lightly beaten
  • 1/3 cup caster sugar
  • 1/2 X 410g jar fruit mince
  • 1 small apple, grated
  • 1 tablespoon brandy
  • 250g PHILADELPHIA Spreadable Cream Cheese
  • 2/3 cup caster sugar, extra
  • 1/3 cup cream
  • 2 eggs, extra, lightly beaten
  • Finely grated rind and juice of 1 lemon
  • 2 tablespoons apricot jam
  • 1 tablespoon flour, extra
  • Cream, extra, for serving


Method

  1. SIFT together the flours and baking powder into a large bowl. Stir through the almonds. Rub in the butter until the mixture resembles breadcrumbs
  2. WHISK together the egg and sugar then stir into the flour and knead lightly to form a soft dough. Wrap in plastic wrap and chill for at least 30 minutes
  3. DIVIDE the pastry into 8 even pieces and roll each out between 2 sheets of baking paper to line 8 x 9cm round fluted tart pans with removable bases. Use a fork to prick the pastry well then chill for 10 minutes
  4. BAKE in a hot oven 200°C for 5 minutes or until lightly golden. Cool
  5. COMBINE the fruit mince, apple and brandy in a bowl. Spoon into the pastry shells
  6. BEAT the PHILLY and extra sugar until smooth. Add the cream, extra eggs, rind and juice. Gently stir in the extra jam and flour. Spoon over the fruit mince
  7. BAKE in a moderate oven 180°C for 25-30 minutes or until set. Cool 15 minutes before removing from pans. Serve each with a dollop of cream


Tips & Hints

  1. MAKES: 8 You can easily use a food processor to make the pastry.
