White Bean Soup with Chicken and Cabbage
Ingredients
- 2 tablespoons olive oil
- 2 onions, chopped
- 500g chicken thigh fillets, chopped into 2cm x 2cm pieces
- 4 cloves garlic, finely chopped
- 500g dried white beans (cannellini or navy), soaked overnight in cold water
- 4 large carrots, roughly chopped
- 5 cups chicken stock
- 5 cups water
- 2 tablespoons VEGEMITE
- 1 bay leaf
- 1 teaspoon finely chopped rosemary
- 500g Polish sausage, cut into 5mm thick slices
- 500g green cabbage leaves, coarsely chopped
- Salt and Pepper, to taste
- Crusty bread, to serve
