Warm Potato, Italian Sausage and Rocket Salad
Ingredients
600g baby chat potatoes
500g Italian sausages
1/2 red onion, thinly sliced
2 roasted red capsicum fillets, cut into strips
100g baby rocket leaves
1/2 cup ZOOSH Mighty Balsamic Splash Light Dressing
Method
GENTLY bring potatoes to the boil in a large saucepan of water & simmer until tender; drain
COOK sausages in a non-stick frying pan over medium heat for 8-10 minutes or until cooked through. Cool slightly then cut thick slices on the diagonal
WHEN potatoes are cool enough to handle cut in half and gently toss with sausage, onion, roasted capsicum and rocket
ARRANGE onto serving plates or large platter, drizzle with dressing and serve immediately
