This easy and delicious recipe for Mozzarella and Pancetta Pizza made with ARDMONA Rich & Thick, Classic Tomatoes will be gobbled up in no time!
Ingredients
20ml olive oil
2 spring onions, finely chopped
2 cloves garlic, finely chopped
400g can ARDMONA Rich & Thick, Classic Tomatoes
1 teaspoon balsamic vinegar
Salt flakes and freshly ground black pepper, to taste
2 x 26cm pre-made pizza bases
100g bocconcini, torn in half
8 thin slices pancetta, halved
Basil leaves, to serve
Method
Pre-heat oven to 200°C. Heat oil in a small frying pan over medium heat. Add spring onions and garlic, cook for 1-2 minutes until softened. Stir in tomatoes, vinegar and seasonings
Bring to the boil, reduce heat and simmer gently for 3-4 minutes or until thickened. Allow to cool slightly
Spread tomato mixture between pizza bases and top with bocconcini and pancetta
Drizzle with a little extra olive oil and cook for 10-12 minutes until bases are crisp and cheese has melted. Serve pizza sprinkled with basil
