Chocolate bark is great with coffee or as a quick afternoon pick-me-up during the Christmas rush. Make some for yours and some more to give away.
Festive Fruit and Nut Chocolate Bark
Ingredients
2/3 cup raisins
2/3 cup dried apricots, cut into 1/2 cm thick strips
2/3 cup toasted slivered almonds
1/3 cup pistachio nuts
250g CADBURY Dark Chocolate Melts
2 teaspoons mixed spice
Method
COMBINE the fruit and nuts in a bowl. Remove and set aside 2/3 cup of the mixture
MELT half of the chocolate in a bowl over simmering water. Remove from heat, add the remaining chocolate and stir until smooth
FOLD the melted chocolate and mixed spice into the fruit mixture. Spread into a lined 28cm x 18cm slice pan. Sprinkle with reserved fruit mixture and press down gently
CHILL for 30 minutes or until firm. Cut into pieces and serve or, store in an airtight container
