Creamy Malabar Chicken Curry

Ingredients

  • 1 teaspoon vegetable oil or butter
  • 1 teaspoon mustard seeds
  • 1 large onion, finely chopped
  • 650g-750 grams chicken breast or thigh, very finely sliced
  • 1 teaspoon Lightly Dried Ginger
  • 1 teaspoon Garlic Stir-In Paste
  • 1/2 teaspoon Lightly Dried Chilli
  • 1 teaspoon Lightly Dried Coriander
  • 400 grams can chopped tomatoes
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 3 cloves, whole
  • 125 millilitres coconut milk or plain yoghurt
  • 1 handful fresh curry leaves, or use a tablespoon dried
  • 1 pinch Lightly Dried Coriander


Method

  1. Heat and grease a large non-stick pan with a little vegetable oil. Once hot add the onion and the mustard seeds and allow the mustard seeds to roast and pop a little
  2. Now add the chicken and allow the first side to brown a little before stirring
  3. Once half of the chicken is browned, add the remaining ingredients except the coconut milk or yoghurt. Allow to cook, stirring often, until the chicken is cooked
  4. You can now reduce the heat and mix the coconut milk or yoghurt in
  5. Garnish with a sprinkle of the Lightly Dried Coriander leaves
  6. To make the rice, prepare as per package instructions. While still hot stir through 80-100 coconut cream and 1 teaspoon of the Lightly Dried Coriander
  7. Wait for about 2-3 minutes to allow the leaves to steam through and then serve with the chicken
