With its delicious combination of flavours, this sandwich is far easier to make than you might think! This ones going to become a staple in your lunchbox.

Ingredients

  • Shredded red cabbage
  • Grated apple
  • Chopped walnuts
  • Plain yoghurt
  • Lemon juice
  • Tablelands Smart Spread
  • French baguette
  • Chopped chives
  • Soft-boiled eggs, quartered


Method

  1. Place cabbage, apple, walnuts into a bowl and mix through with yoghurt and lemon juice (ingredient proportions based on taste). Season to taste with salt and pepper
  2. Spread baguette with Tablelands Smart Spread. Top with coleslaw, chives and egg


Tips & Hints

  1. The yoghurt dressing can be replaced with store brought coleslaw dressing. Red cabbage can be replaced with white.
