Carrot Cupcakes with Lemon Frosting

Ingredients

  • 190g plain flour, sifted
  • 1 tsp baking powder
  • 1/2 tsp bicarb soda
  • 3/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 170g Western Star Original Butter, melted
  • 200g brown sugar
  • 1 large egg
  • 2 tbsp plain yoghurt
  • 1/4 tsp vanilla extract
  • 1 1/2 cups grated carrots (approx 3)
  • Frosting: 250g pkt cream cheese, at room temperature
  • 230g icing sugar mixture, sifted
  • 1 tbsp lemon juice
  • 3 tsp lemon rind, finely grated


Method

  1. Preheat the oven to 180°C. Line a 12-cup muffin tin with paper liners and set aside
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg. Set aside
  3. In a separate large bowl, whisk together the melted butter, brown sugar, egg, yoghurt and vanilla. Add the carrots and stir until mixed. Add the dry ingredients to the wet ingredients, and continue to mix until all ingredients are incorporated
  4. Divide the batter evenly between the muffin tins. Transfer into the oven to bake for 20-25 minutes or until a skewer inserted comes out clean
  5. Remove the cupcakes from the pan, and transfer onto a wire rack to cool completely
  6. To make the frosting, place all the ingredients in the bowl of an electric mixture and beat until smooth. Get the kids to help you spread the frosting over the cakes before serving for a yummy treat!
