Get the kids cooking with this chicken schnitzel recipe and serve with side salad or in wraps for homemade take-away recipe fun.
Ingredients
4 cups fresh breadcrumbs
1/3 cup parsley, chopped
2 tbsp lemon zest, finely grated
10 chicken tenderloins
3/4 cup plain flour, for dusting
2 eggs, lightly beaten
50g Western Star Original Butter
Method
Place the breadcrumbs, parsley, and lemon rind in a bowl and season with salt and pepper. Mix thoroughly to combine
Get the kids to help you crumb the chicken. Place the flour on a medium plate and the egg in a shallow bowl. Lightly dust the chicken tenderloins in the flour, dip into the egg, and then press on the crumb mixture to cover the chicken. Lay each crumbed strip flat on a tray and refrigerate for 30 minutes
Heat the butter in a large fry pan over a medium heat. Cook the strips for 1 minute on each side or until golden (be careful not to have the pan too hot as the butter will burn). Transfer onto a plate lined with paper towel, and allow any excess oil to drain
Serve the chicken strips immediately alongside tomato sauce or aioli
