Ingredients
- 400g heirloom tomatoes, halved
- 2-3 teaspoons, thyme leaves
- 1/4-1/2 teaspoon rapadura sugar
- Salt and pepper, to taste
- Extra virgin olive oil
- 150g mozzarella cheese, grated
- 50g pecorino cheese, grated
- To Serve: 1/2 cup basil leaves
