Quinoa Nori Rolls with Japanese Mayonnaise
Ingredients
- 1 cup (200g) black or red quinoa
- 3 cups (750ml) vegetable stock
- 2 Lebanese cucumber
- 2 medium carrots, peeled
- 8 large snow peas, root end trimmed
- 1/2 red capsicum, membrane and seeds removed
- 1 very firm avocado
- 4 sheets nori, cut in half
- Pickled ginger and wasabi to serve
Japanese Style Mayonnaise
Ingredients
- 1 whole large egg
- 2 egg yolks
- 300ml soy or sunflower oil
- 1/4 tsp sugar
- 1/2 tsp salt
- 1/4 tsp French mustard
- Juice 1 lemon
