Ingredients

  • 4 tbsp mayonnaise
  • 4 tbsp soured cream
  • 2 tbsp Classic Pesto
  • 1 1/2 tsp lemon juice
  • 25g fresh Parmesan, grated
  • 1 small garlic clove, crushed
  • Salt and freshly ground black pepper
  • Flaked sea salt
  • 4 rib-eye or sirloin steaks
  • Olive oil, to drizzle
  • 1 Cos lettuce, or 4 Little Gem hearts, roughly torn
  • A handful of croutons


Method

  1. Whisk mayonnaise, sour cream, pesto, lemon juice, Parmesan and garlic together in a small bowl, and season, to taste with salt and pepper. Set aside
  2. Preheat a griddle pan or large frying pan over a high heat. Rub the steaks on both sides with a little oil and season with flaked sea salt. Once the pan is really hot, cook steaks for 3 to 4 minutes on each side for medium-rare, or until cooked to your liking (don't overcrowd the pan ). Leave the steaks to rest on a board for a couple of minutes while you assemble the salad
  3. Toss the lettuce with enough of the dressing to lightly coat the leaves then divide between serving bowls. Scatter over some croutons. Cut the steaks into thick slices and arrange on top of the salad. Serve immediately
