The name says it all - A little mouthful of bliss without any guilt. A delicious combination of fruit, nuts and seeds with the added goodness of raw cocoa. This recipe uses the KitchenAid Platinum ExactSlice ™ Food Processor.

Ingredients

  • 150g almonds
  • 200g fresh dates, pitted
  • 75g dried apricots
  • 1/4 cup (45g) chia seeds
  • 1/4 cup (35g) pepitas
  • 1/4 cup (35g) sunflower seeds
  • 1/2 cup (35g) shredded or moist flaked coconut
  • 2 tbs (30g) raw cocoa nibs
  • 1 tbs raw cocoa powder
  • 1/2 tsp vanilla extract
  • Good pinch ground cardamom
  • 1-2 tbs coconut oil


Method

  1. For best results use the ExactSlice ™ KitchenAid Food Processor
  2. Fit the food processor with the work bowl and multipurpose blade. Add the almonds and chop on speed 2 for 5 seconds or until roughly chopped
  3. Add the dates, apricots, chia seeds, pepitas, sunflower seeds, coconut, cocoa nibs, raw cocoa, vanilla, cardamom and 1 tbs of the coconut oil
  4. Process on speed 2 for 5-10 seconds or until mixture reaches the desired texture. It should still have some chunks to show off the beautiful colours and textures of the ingredients
  5. Take a small amount of the mixture in your hand and roll it into a ball. If a little dry add the remaining coconut oil and quickly pulse (don't over process)
  6. Roll into bite sized balls to serve or refrigerate in an airtight container


Tips & Hints

  1. Raw cocoa is available from health food stores. Unrolled mixture can be kept in a sealed container for up to 1 week. Roll the bliss balls fresh as you need them, they will stay fresh and moist this way.
