Vegan Vegetable Korma

Paste

Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 teaspoons garam masala
  • 1 teaspoon ground turmeric
  • 2 tablespoons tomato paste
  • 3 garlic cloves
  • 20g fresh ginger, peeled
  • 1/4 cup shredded coconut
  • 2 tablespoons vegetable oil


Method

  1. To make the paste, combine all the ingredients into a bowl of a food processor or blender. Process until it forms a paste. Set aside


Tips & Hints

  1. To save time, you can always purchase a store-bought vegan korma paste. You can also serve with papadums and mango chutney. Yum!


Curry

Ingredients

  • 1 cup cashews
  • 2 cups Vitasoy Milkie Lite
  • 1 carrot, diced
  • 200g white potato, diced
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 cup frozen peas
  • Steamed rice to serve


Method

  1. Combine cashews and Vitasoy Milkie Lite milk and soak for 30 minutes. Pour into the bowl of a food processor or blender and process until smooth. Set aside
  2. Steam, boil or microwave carrot and potato until just tender.
  3. Heat oil in a large pan over medium high heat. Add onion and cook 3-4 minutes or until softened. Stir in prepared paste and continue cooking for 5 minutes or until paste is fragrant. Add peas and cooked vegetables. Simmer for a few minutes. Stir in cashew milk and continue cooking until sauce thickens and vegetables are tender. Serve immediately with steamed rice
