Ingredients
1 cup cashews
2 cups Vitasoy Milkie Lite
1 carrot, diced
200g white potato, diced
1 tablespoon vegetable oil
1 onion, chopped
1 cup frozen peas
Steamed rice to serve
Method
Combine cashews and Vitasoy Milkie Lite milk and soak for 30 minutes. Pour into the bowl of a food processor or blender and process until smooth. Set aside
Steam, boil or microwave carrot and potato until just tender.
Heat oil in a large pan over medium high heat. Add onion and cook 3-4 minutes or until softened. Stir in prepared paste and continue cooking for 5 minutes or until paste is fragrant. Add peas and cooked vegetables. Simmer for a few minutes. Stir in cashew milk and continue cooking until sauce thickens and vegetables are tender. Serve immediately with steamed rice
