An easy muffin recipe full of all the flavours of Christmas. A delightful treat for Christmas brunch.

Ingredients

  • 250g self raising flour
  • 1 tsp bicarbonate of soda
  • 120g dried sour cherries
  • 100g white chocolate, chopped
  • 100g dark chocolate, chopped
  • 1/4 cup rolled oats
  • 100g raw caster sugar
  • 2 eggs, beaten
  • 150ml natural yoghurt
  • 100g Western Star Chef's Choice Premium Cultured Unsalted Butter, melted and cooled slightly


Method

  1. Preheat the oven to 180°C. Line a 12-hole muffin tin with muffin cases
  2. In a large bowl, sift in the flour and bicarbonate of soda. Add the cherries, chocolate, sugar and half of the oats, and stir to combine. Add the eggs, yoghurt and butter. Gently stir until all the ingredients are just combined, but be careful not to over mix
  3. Divide the mixture evenly between the muffin cases, and scatter over the remaining oats. Place in the oven for 20-25 minutes or until the muffins have risen and turned golden. Transfer to a cooling rack and cool for 10 minutes
  4. Serve the muffins warm or at room temperature
