This super easy, old-fashioned Christmas Pudding is the traditional recipe you’ve been looking for – rich, fruity and perfect for your family feast. A true classic that never goes out of style.

Ingredients

  • 30g Western Star Original Butter for lightly greasing the pudding basins
  • 375g sultanas
  • 375g currants
  • 375g raisins
  • 125g mixed peel
  • Grated rind of 1 lemon
  • 2 cooking apples, grated
  • 250g Western Star Chef's Choice Premium Cultured Unsalted Butter, grated
  • 375g soft white breadcrumbs (5 cups)
  • 250g sugar
  • 6 eggs
  • 1 tsp flour
  • 1 tsp ground cloves
  • 1 tsp cinnamon
  • Good pinch of salt
  • 2 tbsp of brandy or rum if desired


Method

  1. Prepare 2 pudding basins by lightly greasing with butter
  2. Cut raisins and mixed peel into even sized small pieces
  3. Place the breadcrumbs in a large bowl. Sift flour, salt and spices over breadcrumbs
  4. Add the grated butter, apple, lemon rind, mixed fruits and sugar
  5. Beat eggs until frothy and add rum or brandy if using
  6. Add to other ingredients and mix thoroughly. Mixture should be fairly soft
  7. Spoon into the prepared basins and cover with greaseproof paper and foil or cloth
  8. Cure tightly with string
  9. Boil for 7 hours on first day and further 4 hours on day it will be eaten
