Ingredients

  • 2 tablespoons canola oil
  • 2 cups water
  • 1 medium onion, diced
  • 1 clove garlic crushed
  • 2 teaspoons freshly grated ginger
  • 1 cinnamon stick
  • 1 teaspoon cumin seeds
  • 5 cardamom pods
  • Chilli flakes (optional)
  • 250g lamb mince
  • 2 tablespoons natural yoghurt
  • 2 teaspoons turmeric powder
  • 1 teaspoon garam masala
  • 2 teaspoons salt
  • 1 1/2 cups basmati rice
  • 1/4 cup almonds, roughly chopped and toasted
  • 1/2 cup mint, finely sliced
  • Salt and pepper to taste


Method

  1. Heat oil in a small frying pan on a medium to high heat. Saute the onions, crushed garlic, grated ginger, cinnamon stick, cumin seeds, cardamom pods and chilli flakes. Cook onion mixture for 3-4 minutes and set aside
  2. In another mixing bowl, place lamb mince, yoghurt, tumeric powder, garam masala, 2 teaspoons of salt and mix well
  3. Add the onion mixture and mix well
  4. In a solid steam tray, add the rice then the lamb mixture then the water. Distribute the rice and lamb mince evenly on the tray. Season with salt and pepper
  5. Cover with foil and steam for 25 minutes
  6. When ready, mix in the almonds and mint
