Ingredients

  • 125g butter
  • 1 cup of brown sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 3/4 cup of self raising flour
  • 3/4 cup of sour cream
  • 1 cup of chopped pitted dates


Method

  1. Cream butter and sugar together until light and fluffy
  2. Add eggs one at a time beating well after each addition. Blend in vanilla
  3. Fold in sour cream, flour and dates into mixture until well combined
  4. Spoon mixture into 8 ramekins (greased) leaving about a 2cm space at the top
  5. Place the ramekins in a perforated steamer tray
  6. Cover with baking paper first then foil
  7. Steam (100°C) for 18 minutes
  8. Serve puddings hot with caramel sauce and a dollop of cream or ice cream


Caramel Sauce

Ingredients

  • 60g butter
  • 1/2 cup brown sugar
  • 300ml cream


Method

  1. Melt butter and sugar in saucepan until dissolved
  2. Add cream and simmer for 5 minutes until slightly thickened
