Panettone Pudding

Ingredients
6 small panettone, cut in half (500g)
2 tablespoons butter, softened
2 cups thickened cream
1 1/2 cups milk
5 eggs, beaten
1/2 cup caster sugar
Zest of 1 orange
1 vanilla bean pod -split and scraped
2 tablespoons flaked almonds
Method
Preheat oven to 150°C on fan forced cooking function
Lightly grease a 2 litre capacity oven proof dish
Butter sides of the panettone with remaining butter and place in dish
In a large bowl whisk together cream, milk, eggs, sugar, zest and vanilla bean seeds. Pour over panettone and allow to soak for 15-20 minutes
Sprinkle with almonds
Place dish in a large roasting pan. Add enough hot water to come halfway up the sides of the baking dish
Cover with baking paper and foil
Bake for 55-60 minutes or until custard is set
Syrup
Ingredients
Juice of 1 orange
2 tablespoons caster sugar
1 tablespoon of water
Method
In a small saucepan on medium-low heat, stir all ingredients until sugar is dissolved.
Increase heat and bring to the boil. Boil 2-3 minutes without stirring, until syrupy. Brush over hot pudding
Serve hot or warm
