Ingredients

  • 1 butternut pumpkin (about 1kg)
  • 1 large onion, peeled and diced
  • 2 carrots, peeled and sliced
  • 750ml (3 cups) of chicken stock
  • 1 teaspoon mild paprika
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of nutmeg
  • 250ml (1 cup) sour cream


Method

  1. Peel the pumpkin and dice into 2cm pieces
  2. Place the diced onion and sliced carrot into the solid steamer tray. Add the rest of the ingredients and mix to combine
  3. Place in the steam oven (100°C) and steam for 40 minutes
  4. Remove tray from steam oven and place pumpkin 'mixture' in a bowl and blend well
  5. Add salt and pepper to taste
  6. Serve with sour cream
