Steamed Ginger Nut and Lime Cheesecake Pots

Ingredients

  • 6 Ginger nut biscuits (Ginger snaps)
  • 300mIs thickened cream
  • 250 grams cream cheese
  • 2 eggs
  • 80 grams castor sugar
  • 2 teaspoons grated lime zest
  • 4 tablespoons lime juice


Method

  1. For best results use a Blanco Steam Oven for this recipe
  2. Grease 6 ramekins or ovenproof coffee cups. Place a biscuit in the base of each
  3. Combine the cream, cream cheese, eggs, sugar, lime zest and juice in a food processor and blend until smooth. Pour the mixture over the biscuits slowly
  4. Place in perforated steamer tray, cover with baking paper first then foil. Cook for 50 minutes or until just firm
  5. Remove cheesecakes from steamer and let cool to room temperature before serving
