Chicken with Caper and Herb Salsa

Salsa
Ingredients
2 tblsp mint leaves
2 tblsp roughly chopped parsley
1 large white onion, chopped
2 tblsp baby capers
2 tblsp lime juice
1/4 cup olive oil
Method
Combine the herbs, onion, capers lime juice and oil, season with salt and pepper.
Set aside
Chicken
Ingredients
4 Lilydale Free Range chicken breasts
1 tblsp ground coriander
Lemon wedges to serve
Crusty bread to serve
Method
Lightly coat the chicken with the coriander.
Heat a lightly greased frying pan over medium high heat and cook the chicken until golden and just cooked through, about 3-4 minutes each side.
Slice chicken and serve with the salsa, lemon wedges and a crusty bread
