Salsa

Ingredients

  • 2 tblsp mint leaves
  • 2 tblsp roughly chopped parsley
  • 1 large white onion, chopped
  • 2 tblsp baby capers
  • 2 tblsp lime juice
  • 1/4 cup olive oil


Method

  1. Combine the herbs, onion, capers lime juice and oil, season with salt and pepper.
  2. Set aside


Chicken

Ingredients

  • 4 Lilydale Free Range chicken breasts
  • 1 tblsp ground coriander
  • Lemon wedges to serve
  • Crusty bread to serve


Method

  1. Lightly coat the chicken with the coriander.
  2. Heat a lightly greased frying pan over medium high heat and cook the chicken until golden and just cooked through, about 3-4 minutes each side.
  3. Slice chicken and serve with the salsa, lemon wedges and a crusty bread
