This Indian turkey and tomato meatball curry made with Steggles turkey mince is an easy warming winter dinner idea to enjoy with rice, or fresh vegetables.
Ingredients
1 kg Steggles Turkey Shortcuts Mince
1 cup cooked white rice
1 onion, finely chopped
1 tblsp finely chopped coriander
2 tspn olive oil
2 cloves garlic, crushed
2 tspn ground cumin
2 tspn ground coriander
2 tspn garam masala
1/2 tspn ground tumeric
1 tblsp grated ginger
1 small green chilli, finely chopped
2 x 400g can crushed tomatoes
1 cup salt reduced chicken stock
2 tspn finely chopped parsley
Method
Place the mince, rice, onion and fresh coriander in a bowl and mix well.
Using your hands, roll eight even sized balls from the mince mixture, place on a tray and refrigerate for 20 minutes
Meanwhile, heat oil over medium heat in a large pan and cook the garlic, spices, ginger and chilli for a minute. Add tomatoes and stock, bring to boil.
Set aside while browning meatballs
Heat a lightly greased fry pan over medium heat, cook meatballs until brown, turning carefully.
Place browned meatballs into sauce and simmer gently for 20 minutes until cooked through and sauce has thickened slightly. Stir through parsley.
