This BBQ chicken and sweet potato pizza is the ultimate lactose-free dinner idea. Made with a lactose-free pizza base, shredded chicken, roasted sweet potato, red onion and topped with Perfect Italiano Lactose Free Pizza Cheese, it's a flavour-packed option for weeknight meals.

Ingredients

  • 1 lactose free pizza base (store-bought or homemade – see notes)
  • ⅓ cup BBQ sauce
  • 1 cup chicken, cooked & shredded
  • 85g thinly sliced and roasted sweet potato
  • ¼ cup red onion, thinly sliced
  • 1¼ cups Perfect Italiano Lactose Free Pizza Cheese
  • Olive oil
  • Fresh rocket leaves, for garnish (optional)


Method

  1. Preheat the oven to 220°C (fan forced) and lightly grease a 30cm pizza tray.
  2. Roll out pizza dough or place store bought pizza base onto prepared tray and spread BBQ sauce evenly over leaving a 1cm edge.
  3. Layer with roasted sweet potato slices, shredded chicken and red onion.
  4. Sprinkle Perfect Italiano Lactose-Free Pizza Cheese over the top, drizzle with a little olive oil and bake for 10-12 minutes or until the cheese is bubbling and crust is golden (see notes)
  5. Garnish with fresh rocket, if desired, and serve immediately.


Tips & Hints

  1. If using store bought pizza bases, choose bases that are 30cm in diameter and adjust the cook time to 8-10 minutes.
  2. To make the roasted sweet potato slices, peel and thinly slice 250g of sweet potato. Place onto a line baking tray and drizzle over 1 tbsp of olive oil. Season with salt. Cook in a 220C preheat oven for 12- 15 minutes.
  3. To save time, preheat oven and roast sweet potato slices while preparing the remaining ingredients for the pizza.
  4. Use leftover roast chicken and vegetables from your Sunday roast. A store-bought BBQ chicken works well too.
