125g PHILADELPHIA Cream Cheese, broken into 2cm pieces
Olive oil spray
1 clove garlic, crushed
1 tablespoon grated lemon rind
Cracked pepper, to taste
2 Turkish bread rolls, halved horizontally
50g baby rocket leaves
1 large avocados, sliced
1 punnet grape tomatoes, halved
1/4 cup balsamic vinegar
1/4 cup olive oil
1/2 teaspoon sugar
Salt and pepper, to taste
Method
PLACE the PHILLY on a lined baking tray. Spray with oil and sprinkle with garlic, lemon rind and pepper.
Bake in a hot oven at 200°C for 10 minutes, until lightly browned. Allow to cool slightly
CUT each piece of bread diagonally into three slices. Spray the bread with oil and chargrill until golden
ARRANGE the bread, rocket, avocado, tomatoes and baked PHILLY on a serving platter, whisk together the vinegar, oil, sugar and seasonings and drizzle over the salad.
Serve immediately
Tips & Hints
To ripen an avocado quickly - store in a paper bag with a ripe banana at room temperature until avocado is soft.
