Tomato and Avocado Salsa

Ingredients

  • 250g grape tomatoes, halved
  • 1/4 cup coriander leaves, roughly chopped
  • 1 small jalapeno or long red chilli, deseeded and chopped
  • 1 small ripe avocado, seeded, peeled and diced
  • 1 tbsp finely chopped red onion
  • 1 tbsp lime juice
  • 1 tbsp extra virgin olive oil


Method

  1. Place all ingredients into a bowl. Season with salt and pepper
  2. Stir to combine and set aside


Crispy Fish Tacos

Ingredients

  • 1/3 cup plain flour
  • 2 eggs, beaten
  • 2 cups Panko (Japanese-style baked breadcrumbs)
  • 500g boned flathead fish fillets, cut lengthways into 3cm-thick strips (or your choice of any boneless white fish fillets)
  • Vegetable oil or rice bran oil, for frying
  • 8 soft tortillas, warmed
  • Piri Piri mayonnaise or sour cream and lime wedges, to serve


Method

  1. Place flour, egg and breadcrumbs onto separate plates. Lightly dust fish in flour, then egg and coat in breadcrumbs
  2. Heat 1cm oil in a large non-stick frying pan over medium heat. Fry fish, in batches, for 2-3 minutes on each side or until golden and just cooked through. Drain on paper towel
  3. Serve fish with avocado & tomato salsa, warmed tortillas, piri piri mayonnaise or sour cream and lime wedges


Tips & Hints
