Make a big bowl of beef mince nachos with this recipe made for sharing! This super easy recipe is a great idea for kids to make at home. Enjoy with Schweppes Lemon Mineral Water
Ingredients
1 tbsp olive oil
1 brown onion, finely chopped
2 garlic cloves, crushed
500g lean beef mince
30g pkt taco spice mix
400g can crushed tomatoes
400g can red kidney beans, drained and rinsed
310g can corn kernels, drained
250g packet natural corn chips
1 1/2 cups shredded tasty cheese
To Serve: 1 just-ripe avocado1 tbsp lime juice
100g grape tomatoes, halved
Sour cream, coriander leaves and lime wedges
Method
Preheat oven to 180°C/160°C fan-forced. Heat oil in a large frying pan over medium-high heat. Add onion and garlic. Cook, stirring often, for 3-4 minutes or until softened
Add mince and cook, breaking up any lumps with a wooden spoon, until evenly browned. Stir in taco spice mix, 1/2 cup water, tomatoes, beans and corn. Bring to the boil. Reduce heat and simmer, stirring occasionally, for 12-15 minutes until thick
Arrange corn chips in a large greased shallow ovenproof dish. Top with mince mixture. Sprinkle with cheese. Bake for 10-12 minutes or until cheese melts
Meanwhile, peel and chop avocado. Place into a bowl, add lime juice and season. Mash until smooth. Serve nachos with mashed avocado, tomatoes, sour cream, coriander and lime wedges
