Salmon and Potato Salad with Lemon Poppy Seed Dressing

Ingredients

  • 750g chat potatoes
  • 100g snowpeas, trimmed and halved
  • 100g smoked salmon, cut into thin strips
  • 1/2 yellow capsicum, cut into strips
  • 2/3 cup Greek style yoghurt
  • 1 tablespoon lemon juice
  • 1 teaspoon finely grated lemon rind
  • 2 teaspoons poppy seeds
  • Salt and freshly ground black pepper, to taste


Method

  1. Boil potatoes until just tender. Add snowpeas to saucepan and cook for 1 minute and drain under cold running water. Allow to cool
  2. Halve potatoes and arrange in a serving bowl with snowpeas, salmon and capsicum
  3. Combine yoghurt, lemon juice, rind and poppy seeds, season to taste and drizzle over salad
