Ingredients

  • 1 cup ZOOSH Just Got Laid Free Range Egg Mayonnaise
  • 2 cloves garlic, crushed
  • 1 tablespoon finely chopped coriander
  • 1/3 cup lime juice
  • 1/4 cup chopped coriander, extra
  • 1 red chilli, seeds removed and finely chopped
  • 1 tablespoon sunflower oil
  • 1 teaspoon coriander seeds, crushed
  • 1/2 teaspoon sweet smoked paprika
  • 1/2 teaspoon salt
  • 6 x 150g pieces Atlantic salmon


Method

  1. COMBINE the mayonnaise, garlic and coriander, cover and chill until required
  2. COMBINE the lime juice, extra coriander, chilli, oil, coriander, paprika and salt and pour over fish. Marinate at room temperature for 15 minutes
  3. LIFT fish from marinade and cook on an oiled chargrill plate over a medium-high heat for 4-6 minutes or until just cooked. Serve with garlic aioli


Tips & Hints

  1. Coriander seeds may be crushed in a mortar and pestle, or by placing in a greaseproof paper package and gently hitting with a rolling pin.
