Cheat's Chilli Con Carne

Make this quick and easy chilli con carne for a tasty mid week dinner. The mince recipe also freezes well for easy weeknight dinners.
Chilli
Ingredients
1 brown onion, finely chopped
500g lean beef mince
1/2 teaspoon chili powder (or to taste)
1 quantity (2 1/2 cups) Mexican Tomato Salsa
400g can red kidney beans, drained and rinsed
Cooked rice, sour cream & coriander leaves, to serve
Method
Fry onion in a large oiled frying pan until soft
Add mince, cook, stirring, until evenly browned
Add chili, cook, stirring for 1 minute
Stir in Mexican Tomato Salsa and kidney beans, simmer for 20 minutes or until thickened
Serve with rice, sour cream and coriander leaves

Tomato Salsa
Ingredients
2 x 400g cans Ardmona Chopped Tomatoes
1/2 small red onion, finely chopped
2 garlic cloves, finely chopped
1 jalapeno or green chili, deseeded, finely chopped
2 tbs lime or lemon juice
1/4 tsp ground cumin
1 tsp sugar
1/2 cup coriander leaves, finely chopped
Method
Drain tomatoes in a sieve over a bowl. Discard juice
Combine drained tomatoes, onion, garlic, chili, lime or lemon juice, cumin and sugar in a bowl. Stir through coriander. Season to taste and serve

Makes: 2.5 Cups
