Try this twist on a classic - make your own Mexican style Bruschetta with a batch of Ardmona's Mexican Tomato Salsa. Save leftover salsa for other delicious Ardmona recipes like Cheat's Chili Con Carne and Easy Beef Nachos.

Bruschetta

Ingredients

  • 8 thick slices sourdough bread
  • Olive oil spray
  • 2 garlic cloves, halved lengthways
  • 1 quantity (2 1/2 cups) Ardmona Salsa (see below)
  • 1/2 cup sour cream
  • Coriander leaves, to serve


Method

  1. Preheat grill to medium-high
  2. Spray bread on both sides with oil then rub with garlic
  3. Grill bread for a few minutes on each side until toasted
  4. Top each slice with salsa and a dollop of sour cream
  5. Season, scatter with coriander and serve


Tomato Salsa

Ingredients

  • 2 x 400g cans Ardmona Chopped Tomatoes
  • 1/2 small red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 jalapeno or green chili, deseeded, finely chopped
  • 2 tbs lime or lemon juice
  • 1/4 tsp ground cumin
  • 1 tsp sugar
  • 1/2 cup coriander leaves, finely chopped


Method

  1. Drain tomatoes in a sieve over a bowl. Discard juice
  2. Combine drained tomatoes, onion, garlic, chili, lime or lemon juice, cumin and sugar in a bowl. Stir through coriander. Season to taste and serve
