Chicken Tacos with pulled chicken

Make a batch of Ardmona's delicious Tomato Pulled Chicken to make these easy tacos! Save leftover pulled chicken for other delicious Ardmona recipes like Mexican Chicken Bake and Pulled Chicken Sliders.

Tacos

Ingredients

  • 8 soft tacos, warmed
  • 2 cups Slow-Cooked Pulled Chicken
  • 1 ripe avocado, finely chopped
  • 1 1/2 cups shredded tasty cheese
  • Coriander leaves, lime wedges & sliced chili (optional), to serve


Method

  1. Building tacos at the table, start with placing a taco on a plate
  2. Top with pulled chicken
  3. Sprinkle with avocado and cheese
  4. Scatter with coriander; serve with lime wedges and chili if desired


Tips & Hints

  1. To make this recipe have a pre made batch of Ardmona's Slow Cooked Tomato Pulled Chicken ready to go.


Pulled Chicken

Ingredients

  • 1 tbs olive oil
  • 1kg chicken thigh fillets
  • 1 brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tbs tomato paste
  • 2 x 400g cans Ardmona Crushed Tomatoes
  • 1/2 cup smoky barbecue sauce
  • Coriander leaves, grilled sweet corn, thinly sliced red onion, lime wedges & rice, to serve


Method

  1. Preheat oven to 160°C/140°C fan-forced
  2. Heat oil in a heavy based ovenproof pan over medium heat. Add onion and garlic, cook, stirring often, for 4-5 minutes until softened. Stir in tomato paste and barbecue sauce and cook for 1 minute. Add tomatoes. Season with salt and pepper. Bring to the boil then simmer, uncovered, for 20 minutes or until thick
  3. Place chicken into a large baking pan. Pour over tomato mixture and toss to coast chicken. Cover and bake for 1 hour or until chicken is very tender
  4. Remove from oven, transfer chicken to a board. Using 2 forks, shred chicken. Stir shredded chicken through tomato sauce. Scatter with coriander. Serve with sweet corn, red onion, lime wedges and rice

  1. Pulled Chicken Prep Time: 20 minutes Cook Time: 1 hour 30 minutes Makes: 6 cups
  2. This recipe uses only 2 cups of Pulled Chicken. Use leftover chicken for other amazing recipes such as Ardmona's Mexican Chicken Bake or Pulled Chicken Sliders.
