These hearty jacket potatoes are perfect for an easy Friday night dinner. You can also use the meatballs recipe to make other meals like the Meatball Dipper Bowl and delicious Pizzas.

Jacket Potatoes

Ingredients

  • 4 large (about 250g each) potatoes, scrubbed and dried
  • 2 cups Meatballs in Tomato Sauce
  • Sour cream and chopped chives, to serve


Method

  1. Preheat oven to 180°C/160°C fan-forced
  2. Prick potatoes 6 times with a fork, wrap in foil and place onto an oven rack
  3. Bake for 1 hour or until tender when tested with a skewer
  4. Heat meatballs in tomato sauce in a microwave or saucepan
  5. Cut a small cross into the top of each potato
  6. Place potatoes on a board, scoop out a little of the potato flesh from the top
  7. Spoon hot meatballs onto potatoes
  8. Dollop with sour cream, season, sprinkle with chives and serve


Meatballs in Tomato Sauce

Ingredients

  • 500g beef mince (or use a mixture of beef and pork)
  • 1/2 cup flat-leaf parsley, finely chopped
  • 1 cup fresh breadcrumbs
  • 1 egg, lightly beaten
  • 2 tbs olive oil
  • 1 small brown onion, finely diced
  • 1 tbs tomato paste
  • 2 x 400g cans Ardmona Rich & Thick Basil & Garlic Tomatoes
  • 1 tsp sugar


Method

  1. Combine mince, parsley, breadcrumbs and egg in a large bowl. Season with salt and pepper. Mix until ingredients are well combined. Using a tablespoon of mixture per meatball, form into small meatballs. Place in a single layer on a tray lined with baking paper, cover and chill for 20 minutes
  2. Heat 1 tbs oil in a large heavy based frying pan. Cook meatballs, in batches, until evenly browned. Remove and set aside
  3. Heat remaining 1 tbs oil in the pan over medium heat. Add onion and cook, stirring often, for 4-5 minutes until softened. Stir in tomato paste and cook, stirring, for 1 minute. Add tomatoes, sugar and 1/2 cup water and stir to combine. Cover and bring to the boil. Add meatballs and their cooking juices. Reduce heat, cover and simmer for 20-25 minutes or until at desired consistency

  1. Meatballs in Tomato Sauce Prep Time: 20 mins Cook Time: 30 mins Makes: 3.5 cups
  2. This recipe uses only 2 cups of Ardmona's Meatballs in Sauce. Leftover sauce can be used for other great recipes like Meatballs on Pizza and the Meatball Dipper Bowl.
