Make this easy butter chicken recipe using Ardmona tin tomatoes. Pick up a BBQ chicken on your way home and make this easy Butter Chicken. Make a big batch of butter chicken and keep the leftovers for other meal ideas using this delicious freshly made Indian tomato sauce base.

Ingredients

  • 1 quantity Indian Tomato Butter Sauce (see recipe below)
  • 1 whole BBQ rotisserie chicken
  • 1/4 cup Greek-style natural yoghurt
  • Handful of mint leaves
  • Basmati rice & naan bread, to serve


Method

  1. Shred chicken flesh, discarding all the skin, stuffing and bones
  2. Heat butter sauce in a large frying pan
  3. Add shredded chicken, stir to combine. Simmer until chicken is hot
  4. Drizzle with yoghurt
  5. Sprinkle with mint leaves
  6. Serve with rice & naan bread


Indian Tomato Butter Sauce

Ingredients

  • 2 tbs butter
  • 1 tbs vegetable oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp garam masala
  • 2cm piece ginger, peeled, finely grated
  • 2 x 400g cans Ardmona Thick and Rich Onion and Garlic Tomatoes
  • 1/3 cup chicken stock
  • 1/4 teaspoon chili powder (or to taste)
  • 1/3 cup almond meal
  • 3/4 cup thickened cream


Method

  1. Heat butter and oil in a deep frying pan over medium heat. Add cumin, coriander, garam masala and ginger. Cook, stirring, for 1 minute
  2. Stir in tomatoes, stock and chili powder. Cover and bring to the boil. Reduce heat, partially cover and simmer for 15 minutes
  3. Stir through almond meal and cream. Simmer for 5 minutes or until thick. Season to taste and serve


Tips & Hints

  1. Indian Tomato Butter Sauce - Prep: 10min, Cook: 30min, Makes: 4.5 cups
  2. If freezing sauce, do not add cream. Instead, add the cream once defrosted and sauce is reheated.
