Frittatas are always a good idea, especially when they're made with chorizo and corn. This easy recipe can be served warm or cool and is a great dinner idea with a side salad.
Ingredients
6 eggs
2 tablespoons plain flour
1/2 cup milk
1/2 cup cream
1 tablespoon finely chopped parsley
410g can sweet corn kernels, drained
1/2 cup grated tasty cheese
1/2 x 250g packet DON Premium Diced Chorizo
Method
Whisk together eggs, plain flour, milk, cream and chopped parsley
Grease a 2 litres shallow ovenproof dish and spoon drained can of sweet corn then the grated cheese evenly into the prepared dish
Gently pour in egg mixture and sprinkle the DON Premium Diced Chorizo evenly on top. Bake in preheated oven at 170°C for 20-25 minutes or until set. Allow to stand for 5 minutes before cutting into wedges and serving with a fresh garden salad
Tips & Hints
Add half a red capsicum very finely diced in Step 2 with the sweet corn.
