HEAT oil in a large saucepan. Add vegetables, bay leaves and thyme and saute for 3-4 minutes without colouring. Stir in tomato paste, stock and brandy and bring to the boil
ADD PHILLY and risoni and bring to the boil. Reduce heat and simmer until the risoni is tender
ADD prawn cutlets and cayenne and simmer for 5 minutes or until prawns are cooked. Remove bay leaves thyme. Serve with crusty bread
