Ingredients

  • 500g chicken mince
  • 1/2 cup fresh breadcrumbs
  • 1/3 cup The Good Nut Crunchy Peanut Butter
  • 3 spring onions, finely chopped
  • 1 red birds eye chilli, seeded and finely chopped
  • 1 teaspoon cumin
  • 2 cloves garlic, crushed
  • 4 bread rolls
  • Lettuce leaves
  • 1 Lebanese cucumber, sliced into thin ribbons
  • 1 large carrot, grated
  • 1/4-1/3 cup sweet chilli sauce
  • Coriander leaves


Method

  1. COMBINE the mince in a large bowl with the next 6 ingredients and mix well. Divide mixture into 6 portions and form into burgers. Refrigerate for 30 minutes
  2. COOK the burgers on a lightly oiled BBQ or chargrill plate until cooked through. Rest for 1-2 minutes
  3. ASSEMBLE the rolls with lettuce, cucumber, carrot and burgers, then finish with a drizzle of sweet chilli sauce and coriander leaves. Serve immediately


Tips & Hints

  1. Burger can be shaped and refrigerated up to 2 hours before cooking or frozen uncooked for up to 1 month. When entertaining, make mini satay 'sliders' and serve in mini bread rolls. Use a vegetable peeler to cut cucumber ribbons.
