Loaded with delicious mediterranean flavours like olives, capsicum, basil and topped with yummy cheese sauce, the kids will love this chicken pasta.
Easy Cheese Béchamel Sauce
Ingredients
2 cups Devondale Full Cream Long Life Milk
2 tablespoons Devondale Dairy Soft Spread
1/4 cup plain flour
1/4 teaspoon ground nutmeg (optional)
1 cup Devondale Tasty All Rounder Shredded Cheese
Salt and white pepper, to taste
Method
Place milk, dairy spread, flour and nutmeg (if using) into a cold saucepan all at the same time, then bring to the boil over medium heat whisking constantly until thick, smooth and glossy
Stir in cheese until melted. Remove from heat and set aside
Pasta
Ingredients
150g penne or rigatoni pasta
1 cup shredded cooked chicken
1/2 roasted red capsicum, cut into strips
1/3 cup black olives, torn, optional
1/2 cup torn basil leaves
Basil leaves, extra, to serve
Salt and cracked black pepper, to taste
Method
Cook the pasta in a medium saucepan of boiling salted water until al dente (approx. 12-15 minutes). Drain well, reserving 1/4 cup of cooking water and return pasta to saucepan
Add reserved pasta water, chicken, capsicum, olives and basil into pasta and stir until heated through. Pour bechamel sauce over pasta and serve with extra basil and season to taste
Tips & Hints
Sliced salami, cooked chorizo or ham would make a great alternative to chicken in this pasta dish. Add any grilled or blanched vegetables that you like, try peas, asparagus, grilled eggplant or zucchini.
