For a lighter dinner, this baked salmon recipe is an easy idea.
Ingredients
4 x 200g skinless salmon fillets
1 cup Devondale Full Cream Long Life Milk
1 tablespoon Devondale Dairy Soft Spread
2 tablespoons plain flour
1/4 teaspoon ground nutmeg (optional)
1/2 cup Devondale Tasty All Rounder Shredded Cheese
Salt and white pepper, to taste
1 tablespoon wholegrain mustard
1 tablespoon freshly chopped dill
1 teaspoon finely grated lemon rind
Salt and cracked black pepper to taste
Rocket salad, to serve
Method
Preheat oven to 200°C (180°C fan forced). Arrange salmon fillets in a baking paper lined baking dish
Meanwhile to make the sauce, place milk, dairy spread, flour and nutmeg (if using) into a cold saucepan all at the same time, then bring to the boil over medium heat whisking constantly until thick, smooth and glossy. Add mustard, dill, lemon rind and season to taste. Pour over salmon
Bake for 15-20 minutes or until cooked through. Serve with a rocket salad
Tips & Hints
The sauce recipe also works well with firm white fish fillets, like hake. Substitute chives or parsley for the dill if preferred.
