Little bites of bacon and pumpkin slice is a nice little lunchbox surprise that's made with a medley of smuggled veggies.

Ingredients

  • 5 eggs, lightly beaten
  • 1 cup self raising flour
  • 1 onion, finely chopped
  • 2 cups grated pumpkin
  • 1 cup grated zucchini
  • 6 rashers short-cut bacon, chopped
  • 1/4 cup vegetable oil
  • 1 1/2 cups grated Devondale Tasty All Rounder Shredded Cheese
  • Salt and pepper, to taste


Method

  1. Preheat oven to 180°C (160°C fan forced)
  2. Combine all ingredients in a large mixing bowl. Season to taste
  3. Pour mixture into a baking paper lined 30 x 20cm slice or lamington pan. Bake for 30-40 minutes or until set. Serve warm or cold


Tips & Hints

  1. This slice is ideal for freezing. Wrap individual slices in plastic wrap for up to 1 month. Defrost as required. Try using grated carrot or sweet potato instead of pumpkin.
