Ingredients

  • 400g zucchini, grated (approx. 2 large)
  • 1/2 cup self-raising flour
  • 1 cup Devondale Mozzarella Shredded Cheese
  • 1 egg, lightly beaten
  • Salt and cracked black pepper
  • 1 teaspoon finely grated lemon rind (optional)
  • 2 tablespoons olive oil
  • 40g Devondale Butter
  • Lemon wedges, to serve


Method

  1. Place the zucchini, flour, cheese, egg, salt and pepper and lemon rind in a large bowl and mix with a wooden spoon until well combined
  2. Heat a large non-stick frying pan over medium heat. Add olive oil and butter. When butter is melted and bubbling, drop heaped tablespoons of zucchini mixture into pan
  3. Cook for 3-5 minutes, carefully turn over then cook until golden brown and cooked through. Drain on absorbent paper for a few minutes and then serve hot!


Tips & Hints

  1. If you prefer, you can use half carrot and half zucchini in these fritters. Try adding other flavours that you like including chopped ham, corn or mustard. You can serve these fritters with tomato relish, natural yoghurt or sauce.
