Place the zucchini, flour, cheese, egg, salt and pepper and lemon rind in a large bowl and mix with a wooden spoon until well combined
Heat a large non-stick frying pan over medium heat. Add olive oil and butter. When butter is melted and bubbling, drop heaped tablespoons of zucchini mixture into pan
Cook for 3-5 minutes, carefully turn over then cook until golden brown and cooked through. Drain on absorbent paper for a few minutes and then serve hot!
Tips & Hints
If you prefer, you can use half carrot and half zucchini in these fritters. Try adding other flavours that you like including chopped ham, corn or mustard. You can serve these fritters with tomato relish, natural yoghurt or sauce.
