Ingredients
200g smooth ricotta
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon grated lemon zest
1 tablespoon lemon juice
4 tablespoon honey
8 thick slices raisin bread
2 packham pears, finely sliced
1 punnet blueberries
Extra honey to drizzle
Baby basil leaves
Method
To prepare the ricotta, in a bowl mix together the ricotta, cinnamon, cardamom, lemon zest & juice and honey
Toast the raisin bread and serve to the table with bowls of the spiced ricotta, sliced pears, blueberries, honey and baby basil leaves to garnish
