A lovely twist on mash, this pear and parsnip mash recipe is a great, sweet alternative to mashed potato and makes a wonderful dinner with duck. Bring a touch of spring to your table with this easy side dish.
Ingredients
4 Packham Pears
4 parsnips
2 cloves garlic
Pinch of nutmeg
6 sage leaves
1 fresh bay leaf
Salt and pepper to taste
2 cups milk
1 cup water
1/4 cup cream
Method
Peel and core the pears, cut into quarters. Peel the parsnips and roughly chop
Place into a saucepan with the garlic, nutmeg, sage and bay leaves
Season to taste then add the milk and water, gently simmer uncovered till the parsnips and pears are soft
Remove from the heat and mash, adding in the cream
The mash can be left rough or blended to make a soft puree
Delicious served with duck or any game meat of your choice
