Put the shredded/grated cheese and cream cheese in a microwaveable bowl. Microwave on HIGH for 1 minute. Stir then microwave on HIGH for another 30 seconds. Add the egg, salt, flavourings and ground almonds, mix gently
Place in between 2 baking sheets and roll into a circular pizza shape (you can make either 1 large pizza or 2 smaller ones). Remove the top baking sheet and place on a pizza tray. If the remaining mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again.
Bake at 200C for 6 minutes, (or until starting to brown moderately) and then flip and cook for another few mins to brown up the other side. ( Put some baking paper on top and flip the whole thing then peel the bottom layer off). You can cool the pizza on a rack or construct your pizza straight away
Place onto a pizza tray - I use a very light sprinkle of cornmeal to stop it sticking to the pan. Add pizza sauce and then arrange toppings of choice. Bake again until toppings are cooked.
