Ingredients
2 cups long grain rice, cooked as per packet directions, drained and chilled
1 green capsicum, thinly sliced
3/4 cup sultanas
6 spring onions, sliced diagonally into 3cm lengths
3/4 cup ZOOSH Wild Times Mango Chilli & Lime It's Sweet & Spicy dressing
2 tablespoons curry powder
3/4 cup toasted cashew nuts
Method
COMBINE the rice, capsicum, sultanas and spring onions in a serving bowl.
Whisk together the dressing and curry powder and stir through the salad. Chill.
Just prior to serving toss through the cashews. Serve immediately
Tips & Hints
For a delicious addition toss through some chopped fresh or well drained canned pineapple.
