Fresh and light, this ricotta honey and pears recipe is a lovely summertime snack to enjoy on its own or after a satisfying meal.
Ingredients
180g fresh ricotta
1 ripe pear
2 tablespoons lemon juice
2-4 tablespoons honey
Method
Slice pears lengthways and remove cores and squeeze with lemon juice so that they don't oxidize and place around the ricotta, then pour a big, rich, gutsy honey over the top and serve
This requires a think natural honey which is more savoury than sweet. Mallee or Heatherwood honey would be great!
In a large mixing bowl, toss the witlof leaves, pear, parsley, and watercress with dressing to just coat the leaves
Pile leaves on plate, top with caramelized onion, scatter cheese over and lay pancetta on top
Serve as a shared dish in the centre of the table
